Monkey Pancakes!

 We read, "Caps For Sale," and all the sequels. So we decided to make monkey pancakes for breakfast. Both in flavor and in character! 

This recipe yields 8-9 medium pancakes.

Ingredients:

* 2 Large Eggs

* 2 Med. Bananas

* 2 Tbsp. Peanut Butter ( I used Cashew Butter because it is a healthier nut butter.)

* 1 tsp. baking powder

* Lily's Dark Chocolate Chips (they're sugar free!!)


Directions:

* Add all ingredients to the mixing bowl

* Use a hand mixer to liquify the bananas and nut butter.

* Cook on a skillet on low-med heat.


For presentation, Make one large pancake for the face, two medium pancakes which will be the monkey's ears, and one small/medium pancake for nose and mouth area. 

I found at Publix these edible eyeballs for cake decorating and as much as we make things like this, I had to get them. So we used those, but if not, use chocolate chips. 

Then, use chocolate chips for nostrils and a smile! Top with butter and syrup if desired.
