Coconut Flour Chocolate Chip Banana Bread
No added sugar! Just the natural sugar in bananas! This bread is an excellently satisfying treat with no guilt!
Ingredients:
* 4 ripe bananas
* 2 tsp baking soda
* 1/2 cup coconut flour
* 1/4 cup melted coconut oil
* 1/4 cup ground flax seed (I used my smoothie grinder to grind a 1/4 cup of flax)
* 3 eggs
* chopped walnuts (desired amount- I eyeball this measurement)
* Lily’s dark chocolate chips (sugar free and again I eyeball this measurement to desire)
* 1 tsp of cinnamon
* 1/3 cup of any nut butter. I used cashew butter. Could use almond or peanut butter as well.
Instructions:
* preheat oven to 350 F.
* spray a loaf dish with olive oil cooking spray or grease with butter.
* mash bananas in large bowl with a potato masher.
* add all other ingredients and mix well.
* Pour into loaf dish and bake for about 50 mins.
