Blueberry Muffins Made Healthy - A great start to the day! Gluten free - Grain Free - Option for Dairy Free
Ingredients:
* 1 3/4 cup of Coconut flour
* 1 tsp Cinnamon
* 1/2 tsp baking soda
* 1/2 tsp salt
* 1/2 cup unsalted butter, softened (I used coconut oil this time as I was out of butter).
* Liquid stevia to sweeten to taste
* 1 cup coconut milk
* 1 tsp vanilla
* 2 eggs
* 1 1/2 cups fresh blueberries
Directions:
* Preheat oven to 350F
* Mix all ingredients into large bowl
* Disperse into greased muffin tin or into muffin cups and bake until fork comes out clean from center...approx. 25-30 mins.
