Ok, I added butter to the top of mine and local raw honey to sweeten, but you don't have to. πππ
Ingredients:
2 cups Cassava Flour
2 tsp Baking Powder
Cinnamon (I didn't measure; desired amount)
2 cups of homemade applesauce ( I had made some ahead of time. See foot note at end for how to do this healthfully.) *
1/2 cup unsweetened coconut milk
A splash of vanilla extract
Liquid stevia to sweeten (desired amount).
** Non vegan option: 1 tsp local raw honey to sweeten.
Instructions:
1. Preheat oven to 375F
2. Mix all ingredients together in a medium sized bowl.
3. Add to greased muffin tin or paper muffin liners, evenly to the brim, not overflowing.
4. Bake for 22-25 mins.

Footnote* Making your own applesauce:
- I used pink lady apples but you can use anything you like per your desired palette. I just went with what was left at U-pick our second time around.
-Peel 8 apples, then chop and core them.
-Boil water in a large pot.
-Add apple slices to the boiling water and let them bubble until soft all the way through. This won't take long.
-Now pour into a colander gently, to drain the water.
-Pour apples into a medium mixing bowl.
-Add apple cider vinegar...about 1/4 cup.
-Add cinnamon...I eyeball my spices. A large amount for myself.
-Use a potato masher and mash together the ingredients.
-Spoon the applesauce into glass jars with lids and set in refrigerator until use.
