Sweet Potato, Spinach, Onion, and Mushroom Quiche

I made this a few months ago and loved it. So, I made it again. As with recipies, I hate to read an intro, I just want to know what I am doing. So, here it is. Enjoy!

Finished Quiche


Ingredients:

*One large sweet potato
*8 (ish) eggs (I kept adding until it looked like it would fill my baking dish)
*Fresh chopped mushrooms
*Spinach
*One large purple onion
*Minced Garlic
*Olive oil or coconut oil...whichever healthy oil is your preference
----I don't usually measure anything...I eyeball...So sorry for no exact amounts. It's really up to your preferences.----

Spices:

*Chili Powder
*Ground black pepper

Instructions:

*Preheat oven to 425 deg. F.
*Chop onion and place in a pan. Add garlic. Using a drizzle of your oil, Sautee the onion until mildly cooked. 
*While the onion and garlic are sauteeing, in a large mixing bowl, crack in your eggs, add your mushrooms, spinach, and pepper. 
*Once onion/garlic are sauteed well, pour into egg mixture. Set aside.
*Slice into thick potato chip style slices your sweet potato. 
*Use your oil to "grease" your casserole dish
*Line an 8x8 ish casserole dish with the sweet potato slices in the form of a crust. Bottom of dish, and up the sides. 
* Sprinkle chili powder over sweet potatoes
*Pour egg mixture over sweet potatoes evenly
*Bake in oven at 425F for 45 minutes or until eggs are thoroughly cooked and potatoes are soft. 




This recipe can be altered of course in any way that suits your desires. Add veggies, switch it up. The point of this recipe is its healthfulness and delicious way of incorporating protein and veggies. Voila!  Bon Appetit!
